If we require an interview in the Interview field, will it prevent applicants from submitting their application?

An applicant can submit the application even though an interview is required. The SAO allows you to indicate all of your requirements in one place so that it is easy for the applicant to gather those requirements and complete your application. You can add the link to the tool that you use to schedule an interview or conduct interviews to provide as much information as possible to the students. Please note, interview requirements can be shared, but interview tracking, scheduling, and completeness cannot be tracked via the SAO. You will have to access your interview scheduler and platform to track the completeness.
